An "All-America Selections" winner, Waltham Butternut winter squash is an improved variety of the original Butternut squash introduced in 1944. The vigorous vines produce generous yields of bottle-shaped fruits with bulbous bases and narrower tops, each up to 10 inches long and weighing about 5 pounds. Their tan-colored skin is very shiny and ever-so-slightly ridged, and their dark orange flesh is thick, fine-grained, and sweet. Waltham Butternut winter squash is delightful when sliced into bite-sized chunks then baked or steamed. Or mash it up as a savory side that's much healthier than mashed potatoes. Winter squash takes longer to vine ripen than summer squash, but it's definitely worth the wait because of how extremely well it keeps. Winter squash varieties have much tougher exteriors than their summer counterparts, so they're hardier when it comes to storage and keep for months at a time. Waltham Butternut winter squash will keep up to 6 months! They also have their own unique set of delicious culinary uses.
