Introduced before 1880, the Purple Top White Globe turnip quickly became the standard for commercial and home garden cultivations and remains so today. It's actually two vegetables in one, producing crisp roots as well as delicious greens. And it's quite a charmer in the garden as well as on the table, with its cherubic white roots blushing with pinkish purple at the top. Early and easy growers, Purple Top White Globe turnips can be 5 inches in diameter or more when fully mature, but they're best picked and eaten when a bit younger and smaller at approximately 2-3 inches. The lovely white flesh has a fine texture and mild, sweet flavor that's just as delicious raw and crisp in a salad as it is boiled or mashed like a potato. It's also perfect for soups and stews. Cook the top leaves like spinach for a savory side, or use them in other favorite dishes. Thanks to their quick growing time, Purple Top White Globe turnips are a great candidate for successive sowings. Start a crop early in the spring as soon as soil can be worked, and again in late summer for a hardy fall crop.
