Also known as "Ragged Jack," Red Russian Kale was introduced into Canada by Russian traders. It's a very old variety that has been known in Europe for centuries, but is relatively new to the U.S. Its wavy, blue-green leaves have veins that turn deep purple in cold weather, and the leaves themselves will turn reddish purple when temps drop even lower. Red Russian kale leaves are very tender with an excellent, mildly sweet flavor and can be harvested as "babies" or when larger and more mature. It's a very cold-hardy variety, and it actually becomes more flavorful after enduring a light frost so it's the perfect early spring and fall crop. The plants grow as high as 3 feet and produce leaves as big as 18 inches that have a wide and flat appearance resembling an oak leaf. Kale is becoming increasingly popular because it's been found to be one of the healthiest vegetables you can grow. It's literally packed with all the most powerful antioxidants, particularly the carontenoids and flavonoids that have been found to help prevent and fight cancer. It's also loaded with vitamins and minerals, very low in calories, and contains no fat. No wonder it's so often referred to as "the queen of greens."
