A truly beautiful Italian heirloom that dates back to the early 1800s, Black Palm Tree cabbage is a loose-leafed variety that closely resembles kale. The heads sprout heavily savoyed leaves up to 24 inches in length that are deliciously flavored and work well raw or cooked in a variety of recipes. Very tolerant of cold temperatures, it can actually become more flavorful after enduring a frost. Although the leaves of the Black Palm Tree cabbage can reach 2 feet in length when mature, they can be harvested sooner if desired. Simply pull up from the bottom, rinse in a colander, and enjoy! Or store them in a cool place for later use (36 degrees Fahrenheit for up to a week). Black Palm Tree cabbage is wonderful cooked in soups and stews. Fresh from the garden in all its raw glory, it makes a fantastic salad too. It contains cancer-fighting antioxidants, is a good source of vitamin C, fiber, potassium, and numerous other nutrients, and it has the fewest calories and least fat of any vegetable. It's helpful as an anti-inflammatory, and is also known for being great for brain, bone, eye, eye, and skin health.
