Belgium gets the bragging rights to these little gems. They get their name from the country's capital, Brussels, as they once grew in great abundance there. Catskill Brussels sprouts are a relatively young variety, introduced in 1941 by seed expert Arthur White. When mature, the stalks of the Catskill Brussels sprout boast numerous sprouts 1-2 inches in diameter. The deep-green sprouts are tender and flavorful and offer many creative uses in the kitchen. They're great for freezing too! If freezing, they should be harvested right away. Otherwise, they can be picked as needed. What an easy vegetable! Along with being easy to grow and easy to use, Brussels Sprouts are easy to love because they offer so many amazing health benefits.
