It was first introduced in the US in the mid-1800s and has become a popular crop in gardens across the country. The heads of Early Jersey Wakefield cabbage are small, compact, pale green, and conical, and average 2-4 pounds in weight. Their smaller size gives them a deliciously sweet flavor, the heads are resistant to yellowing and splitting, and they're tolerant of harsher weather conditions thanks to their protective outer leaves.
