When it comes to planting corn, Ambrosia is a picnic. How appropriate! Easy to grow, earlier than most, and vigorous, it's a very plump, juicy, sweet-tasting corn. Stalks grow to 7 feet with ears 8 inches long. Prefers warmer soil (at least 60 degrees). Beautiful white and yellow checkered kernels. 70-80 days.

And Ambrosia is the variety that will consistently earn the praise of everyone around the table, and in the garden. Defined as "something very pleasing to taste and smell," Ambrosia is a perfect name for this beautiful, bi-color corn. An earlier variety than most, it produces stalks about 6-7 feet tall, bearing ears that are an impressive 8 inches in length with 16 rows of kernels. Like most corn, Ambrosia is wind pollinated, so you'll want to plant it in a block of shorter rows instead of one long row. Select a sunny spot that's at least 10x10 feet, making sure it's on a side that won't block the sun from other plants when the corn stalks get tall. Ambrosia corn is ready to harvest when you notice the silks have turned brown and the ears feel firm. For best flavor and texture, pick, cook, and eat your corn the same day. You can also freeze it right on the cob if you want to save some for later.
