Introduced in 1913, Acorn Table Queen winter squash is probably the most recognizable squash known in the U.S., second only to the pumpkin in popularity. The vigorous vines produce very uniform, acorn-shaped fruits, each 4-6 inches in diameter and weighing 1-2 pounds. Their skin is a glossy blackish green and deeply ridged, giving it a fun fluted appearance when cut, and their flesh is golden to orange-yellow and has a very sweet and savory flavor when baked. While winter squash takes longer to vine ripen than summer squash, it's definitely worth the wait because of how well it keeps. Winter squash varieties have much tougher exteriors than their summer counterparts, so they're easy to store and keep very well for months at a time. They also have their own unique set of delicious culinary uses. They're the mainstays when it comes to baking, roasting, and stuffing, and can't be beat when it comes to creating all of those comfort foods that make the cold winter months a little more tolerable. To increase longevity, harvest with at least 2 inches of stem still intact.
