Known as Red Danish prior to 1906, Mammoth Red Rock cabbage has a beautiful red-purple color that is consistent to the core. The heads are round to oval in shape and weigh 5-8 pounds when mature. Delicious in a variety of recipes that call for it to be raw or cooked, Mammoth Red Rock cabbage is really a star with it comes to pickling. It also stores like a champ, keeping its hardiness without losing any flavor or crispness. Mammoth Red Rock cabbage contains a wealth of phytochemicals, antioxidants, nutrients, vitamins, and minerals, including thiamin, riboflavin, folate, calcium, manganese, magnesium, iron, potassium, and vitamins A, B, C, E, and K.
