The Long Island Improved variety was first bred in the 1890s in (you guessed it!) Long Island, New York, and became well known for its delicious flavor, heavy yields, and hardiness. When mature, the stalks boast numerous sprouts 1-2 inches in diameter. They're surprisingly tender and flavorful and offer many creative uses in the kitchen as well as on the grill. They're great for freezing too! If freezing, they should be harvested right away. Otherwise, they can be picked as needed. What an easy vegetable!
