Belgium gets the bragging rights to this group of veggies. They get their name from the country's capital, Brussels, as they once grew in great abundance there. The Long Island Improved variety was first bred in the 1890s in (you guessed it!) Long Island, New York, and became well known for its delicious flavor, heavy yields, and hardiness. When mature, the stalks boast numerous sprouts 1-2 inches in diameter. They're surprisingly tender and flavorful and offer many creative uses in the kitchen as well as on the grill. They're great for freezing too! If freezing, they should be harvested right away. Otherwise, they can be picked as needed. What an easy vegetable! Boasting many health benefits like its kale and broccoli relatives, the Long Island Improved Brussels sprout variety is low in calories and carbs, yet high in fiber to promote good digestion and a healthy gut. They're also high in vitamins K and C, so they promote bone and blood health as well as support the immune system. And let's not forget that they're packed with antioxidants.
