Related to the original Hubbard, this "Blue" variety of winter squash was introduced in 1909 and has easily maintained its popularity. Vigorous vines produce heavy harvests of large, blue-gray fruits that are pumpkin-like in shape and feel but have tops that narrow into short necks. Each squash can grow as large as 12-15 inches long and 9-12 inches in diameter, tipping the scales at up to 12 pounds. Their orange flesh is thick, dry, and mealy with excellent flavor. While winter squash takes longer to ripen on the vine than summer squash, it's definitely worth the wait because of how extremely well it keeps. Winter squash varieties have tougher exteriors than their summer counterparts, so they're much hardier when it comes to storage and keep for months at a time. They also have their own unique set of delicious culinary uses. They're mainstays when it comes to baking, roasting, and stuffing, and can't be beat when it comes to creating all of those comfort foods that make long winters more tolerable. Like Hubbard Blue squash pie (similar to pumpkin pie, only much more interesting)! To increase the longevity of your Hubbard Blue squash, harvest with at least 2 inches of stem still intact.
