First discovered by the Spaniards and plentiful throughout South and Central America, Lima beans are named for the capital city of Peru (which is actually pronounced Lee-ma). When the Henderson's Dwarf Butter variety of lima bean was first introduced in 1888, its producer, Peter Henderson & Co., offered $100 in cash for plants bearing the most pods. Farmers quickly learned to love this variety of lima because it was one of the first that didn't need stakes for support. Relatively low maintenance and quick to grow, mature plants will yield quite a heavy harvest of 3-inch pods, each with 3-4 lima beans inside. When it comes to picking Henderson's Dwarf Butter lima beans, perfect timing is when you notice the pods getting plump and they feel quite firm. Keep an eye on your crop so you can follow their progress and pick right when they're ready. This will give you the most tender and tasty beans. If you wait too long, the beans tend to be tough. Also called butter beans, Henderson's Dwarf Butter lima beans are pale green when ripe and white when dry and have a buttery taste that adds great flavor to lots of recipes. They're high in dietary fiber and protein and rich with copper and manganese. They're also a great source of folate, phosphorus, protein, potassium, iron, magnesium, and vitamins B1 and B6.
