They boast gorgeous, silvery-green leaves that add a lot of ornamental beauty to any garden scape. Plants will grow to about 3-6 feet in height and produce chokes 2.5 inches wide x 4.5 inches long, each with a ball-like purplish head and scales that turn in at the top. The traditional way of eating an artichoke is to boil it and then pluck the leaves for dunking into butter, mayo, or other savory dips.
