A welcomed addition to the menu at an autumn dinner party, summertime gathering, or anytime in between, the Green Globe artichoke is also a favorite because it's the easiest variety to grow. While hardy vegetables are the ultimate prize, gardeners also love Green Globe artichoke plants simply because they're so beautiful. They boast gorgeous, silvery-green leaves that add a lot of ornamental beauty to any garden scape. Plants will grow to about 3-6 feet in height and produce chokes 2.5 inches wide x 4.5 inches long, each with a ball-like purplish head and scales that turn in at the top. The traditional way of eating an artichoke is to boil it and then pluck the leaves for dunking into butter, mayo, or other savory dips. A surprisingly versatile veggie, they're also great in salads, soups, casseroles, and, of course, with spinach in a dip. However you choose to use them, they pack a lot of health benefits too. Artichokes contain fiber, folate, iron, magnesium, and vitamin K, as well as high levels of antioxidants like vitamin C. Green Globe artichokes are also great for the environment!
