Uniform, creamy white curds (the individual florets) give this heirloom vegetable an edge over the others. Leaves naturally fold over the top to protect the head and keep it blanched. Serve whole, steamed and dusted with Parmesan cheese then baked in the oven.

Introduced by Peter Henderson in 1888, Snowball Early cauliflower has been the standard of early cauliflowers for many years. The plants are dwarf with short stems and the pure white heads grow to approximately 7 inches in diameter. Snowball Early cauliflower can be grown in the spring or fall as it needs cool temps for its heads to form. Pick one season or sow them both for a summer and late-fall harvest. You can never have too much of this beauty on hand. It's been a gardener's favorite for decades, not only because it's easy to grow but also because it's easy to cook with and packed with nutritional value. Raw, baked, broiled, steamed, or frozen, its culinary possibilities are endless. It's especially good mashed as a much healthier alternative to potatoes.
