The traditional salad lettuce of the Kentucky Derby, Bibb Butterhead lettuce is an excellent cold-weather vegetable and will do well in areas with cooler summers or warmer winters (anywhere the soil stays below 75 degrees Fahrenheit). Generous, frilly lettuce heads will be ready to harvest in as little as 55 days, each producing layers of thick, dark green leaves with paler green leaves at the center.
